As soon as September starts my kitchen prepares for fall and, to no surprise, fall is one of my favorite seasons. I love to see the colors changing in the trees and the flavors that are beginning to be smelled in the air… I like to prepare recipes that are not only delicious but also have that autumn “feeling”.
For me, Banana Bread is one of those recipes that brings with it the feeling of fall. It’s perfect for cold afternoons, rainy mornings and those gray days that make you want to stay on a comfy sofa with a cup of warm coffee and a little piece of something... that something is my Banana Bread.
This recipe is extremely simple, easy to convert to a vegan recipe and gives the opportunity to add ingredients that you like

Ingredients:
• 2-4 bananas (very ripe, best if they have black spots)
• ½ cup of butter (melted)
• 1 egg
• ½ cup of sugar
• 1 and ½ cup of flour
• ½ teaspoon Baking Soda
• 1 teaspoon vanilla
• 1 teaspoon of cinnamon
•A pinch of salt
• Nuts, dried fruits, chocolate chips (optional to add)
Method:
In a large container, mash the bananas with a fork until it is like a puree. Then add the melted butter and mix well.
Add and incorporate well the rest of the ingredients.
Grease the mold with butter and pour the mixture. (If you want to add nuts, dried fruits or chocolate you can do it now or at the end to decorate.)
Bake at 350° for 55-60 minutes or until a wooden pick comes out clean.
When it's ready, let it rest for a few minutes and enjoy!
*For a vegan option, use vegan butter instead of regular butter and applesauce instead of eggs. This way you will have a vegan and delicious banana bread.
